Fudge making – 26th January 2021

Before and after photos from our fudge-making session this week! You can have a go yourself at home using a simple recipe (see below). We also learnt about the myths and misconceptions of beekeeping, some of which are still around today!

Ingredients
397g can Carnation Condensed Milk
140ml milk
450g caster sugar
115g butter
2-3 tablespoons honey

You will also need…
Approx. 20cm square tin lined with baking parchment

Method
1. Place all ingredients in a large pan and melt over a low heat until the sugar dissolves
2. Bring to the boil and then simmer for 10 to 15 minutes stirring continuously. You should make a figure of eight shape when stirring, ensuring that you scrape the spoon around all surfaces of the pan. The fudge is very HOT so take care when stirring pan. The fudge is ‘ready’ once a drop of fudge solidifies on a cold plate.
3. Once the fudge sets on the plate, remove from heat a beat for 10 minutes. The fudge should become thick and starting to set.
4. Pour into a prepared tin and leave to cool before cutting into squares.
